I’ve been baking sourdough for nearly a decade and always keep a healthy starter ready to go in my kitchen. It has been fed consistently with organic flour and maintained carefully to keep it strong, active, and reliable.
Sourdough starters are wonderfully resilient and adaptable — once you have one in your kitchen, it can live with you for years with simple care.
How to Wake Up Your Starter
After shipping, your starter may be a little sleepy. A few feedings will quickly bring it back to full activity.

Allow the starter to come to room temperature.

Feed it using a 1:1:1 ratio by weight of starter, flour, and water.
Example:
If you have 100g starter, feed with:
• 100g water
• 100g flour
Mix well and leave at room temperature.
Within a few feedings, the starter should begin doubling in volume within about 12 hours, indicating it’s ready to bake with.
Storage
Sourdough starters are very forgiving.
If you bake frequently:
• Keep your starter at room temperature and feed daily.
If you bake occasionally:
• Store it in the refrigerator between feedings and refresh it when you're ready to bake again.
What You Can Bake
Most sourdough recipes use 100–150 grams of starter, so your culture will quickly expand into enough for:
• Artisan sourdough bread
• Pizza dough
• Pancakes or waffles
• Crackers
• Flatbreads
• Sourdough pastries
Any extra starter (often called discard) can be used in all kinds of delicious recipes.
